The recipe

Yield: One 9-inch pie

Ingredients

  • For the pumpkin filling

  • For the crust

  • For serving (optional)

How to make it

  1. Preheat your oven to 425°F.

  2. In a large bowl, whisk together the pumpkin purée, egg yolks, and whole egg until smooth.

  3. Add the sweetened condensed milk, cinnamon, ginger, salt, nutmeg, and Chinese five-spice powder. Whisk until everything is well combined and silky.

  4. Roll out your chilled pie dough and gently fit it into a 9-inch pie dish. Trim any excess dough and crimp the edges.

  5. Pour the pumpkin filling into the unbaked crust. Gently tap the pie dish against the counter to release any air bubbles.

  6. Bake at 425°F for 15 minutes.

  7. Without removing the pie from the oven, reduce the temperature to 350°F and continue baking for another 30–40 minutes, until the filling is set around the edges with just a slight wobble in the center.

  8. Remove from the oven and let cool completely before slicing. Refrigerate until ready to serve.

  9. Serve with a generous dollop of whipped cream and a sprinkle of cinnamon, if you’d like!

Corinne's tips

  • A little tip

If your crust edges start browning too quickly, loosely cover them with foil or a pie shield. The center should still have a slight jiggle when you take the pie out of the oven. It will continue to set as it cools.

    Apple Pie with All-Butter Crust

Apple pie has always been one of my favorites. Whenever I’m home in Massachusetts in the fall, apple picking and a homemade pie are pretty much a given. I have so many good memories of the oven warming the kitchen while it’s cold outside, the whole house smelling like cinnamon apples and buttery crust, and everyone finding their way into the kitchen for a slice. It’s one of those little traditions that makes being home feel like home.

    Apple Turnovers 🍎

For my last day in New England, I had to make one more thing with my freshly picked apples before heading back to San Diego. Apple turnovers are one of my dad's favorites, and honestly, they're much easier than they look. Store-bought puff pastry does most of the heavy lifting, but you still get the warm cinnamon apples, buttery layers, and a kitchen that smells like fall. One last little taste of home. 🤎
