The recipe
Ingredients
How to make it
Heat the butter and sun-dried tomato oil in a large pot over medium heat. Add the onion, celery, and carrots. Season with salt, pepper, herbes de Provence, and red pepper flakes. Sauté for about 5 minutes, until softened.
Stir in the sun-dried tomatoes, tomato paste, and garlic. Cook for another 1–2 minutes.
Pour in the chicken broth and heavy cream. Bring to a gentle simmer and stir in the cooked chicken.
Add the tortellini and cook according to the package directions, keeping the soup at a gentle simmer.
Reduce the heat to low. Stir in the cream cheese and Parmesan until melted, then add the spinach and basil. Stir until the spinach wilts.
Taste and adjust the seasoning. Add a splash of broth if you prefer a thinner soup, and serve with extra Parmesan.

Apple Pie with All-Butter Crust
Apple pie has always been one of my favorites. Whenever I’m home in Massachusetts in the fall, apple picking and a homemade pie are pretty much a given. I have so many good memories of the oven warming the kitchen while it’s cold outside, the whole house smelling like cinnamon apples and buttery crust, and everyone finding their way into the kitchen for a slice. It’s one of those little traditions that makes being home feel like home.
